Empirical wines are finely crafted through collaborative experimentation and observation by both viticulturalist and winemaker. The combined knowledge, passion and complete freedom to make wines in a style reflective of this talented teams’ vast experience, results in truly exquisite, limited edition wines that showcase the very best of their vineyards.

The fruit for this Gewürztraminer came from Charcoal Gully vineyard in Central Otago. The Lowburn soils, continental climate and the cool nights that caused slow maturation, produced fruit with bright acidity and exceptional aromatic characteristics.

The grapes were hand-picked, destemmed, juiced and left on the skins for eight hours. It was then lightly pressed before undergoing a cool ferment in temperaturecontrolled vats. The wine was filtered before bottling and left to mature in our cellar for 12 months before being released.
