VITICULTURIST’S NOTES
The Sand Dollar Pinot Gris was picked in early April. The fruit was clean with moderately ripe skins and seeds. The earlier picking date for this dry style assists winemaking by retaining fresh, natural acidity and lovely bright flavours
2 500 vines per/Ha on VSP two-cane trellis.
WINEMAKERS’S NOTES
Picked at relatively low brix for elegance and site expression this is a dry style Pinot Gris. Pre-settling maceration of 10 hours before settling for two days. This wine was fermented in tank at low temperatures through to dryness and kept cool for several weeks before sulphuring. Extensive lees stirring post ferment for texture and along with 5% wild barrel fermentation has added different layers of complexity. Estate grown, estate bottled.
