Garnet red colour in the glass. Ripe cassis notes, hints of fresh herbs, with toasted coffee notes from the oak. Medium body, ripe berry and plums with hints of oak. Medium tannin and a linear structure with a lingering finish.
From the renown Australian viticulture region of Coonawarra on the Limestone Coast. Rust red earth or terra rossa is a feature of this region, cool nights and long mild growing season makes for distinctive and recognisable Cabernet Sauvignon.
Grapes are full and partial destemmed, crushed into modern temperature controlled stainless steel tanks. Fermented on skins with the cap managed daily. The wines are assessed for colour and tannin evolution prior to pressing the wine off the skins. The wine undergoes full malolactic fermentation to temper the acid profile. Judicious use of oak to act as a foil for the distinctive fruit characters of Coonawarrra Cabernet.
